How to make Prawn Potstickers?

Makes: 25 - 30 dumplings
Method
  1. Place prawns in a food processor. Pulse until roughly chopped. Do not let it get fine. Transfer to a bowl. Stir in ginger, Light Soy sauce, Sriracha sauce and sesame oil.
  2. Place 1 gyoza wrapper on a flat surface. Use your fingertips to pleat the edge 4-5 times. Use water to seal it. Fold over to enclose the filling. Place on a lined baking tray. Repeat with remaining wrappers and prawn mixture, placing dumplings in a single layer on tray.
  3. Heat oil in a large non-stick frying pan over high heat until just smoking. Remove from heat. Arrange the dumplings over the base of the frying pan. Return to heat and cook for 2 minutes or until the base of the dumplings are golden.
  4. Pour water evenly over the dumplings but do not cover it with water. Cook, covered for 3-4 minutes or until dumplings are cooked through and the water evaporates. Remove from heat and set aside for 2 minutes.
  5. Place on a serving platter. Serve immediately with dipping sauce.

Dipping Sauce (Woks of Life)
  • 1 teaspoon sugar
  • 1 tablespoon hot water
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon chilli oil
  • 1 teaspoon garlic (minced)
  • 1 teaspoon toasted sesame seeds
  • ½ teaspoon sesame oil

Mix all the ingredients together.
